Book Club: The Lucky One by Nicholas Sparks

Back at it with the reading! Here is the current book I am reading. All of the information in the book sleeve is below… I hope you all enjoy this!

Shrimp Scampi Zucchini Noodles

Okay slim down girlfriends… here is a delicious shrimp scampi over zoodles I made for dinner tonight. It was not only a hit with me but Blake was obsessed with it as well. Here are the simple ingredients and recipe for this must have dinner!

Ingredients makes 2 servings 

  • 4 medium to large zucchinis
  • 1/2 pound of fresh shrimp
  • 1 lemon juiced
  • 1/4 cup white wine
  • 2 tbsp extra virgin olive oil
  • 1 tbsp garlic
  • Mrs Dash garlic and herb seasoning
  • Pink Himalayan Salt (optional) 

Directions 

  1. Using your spiralizer, spiralize your zucchini into noodles
  2. In a saucepan cook your zucchini noodles and prawns over medium heat with 1 tbsp of extra virgin olive oil
  3. Cook for about 10 minutes when the shrimp is pink you should be good
  4. Add in the juice of 1 lemon, 1/4 cup of white wine, minced garlic and add in 1 tbsp of extra virgin olive oil and let simmer for 10 more minutes. Tossing occasionally.
  5. Add in Mrs Dash garlic and herb seasoning and optional Pink Himalayan Salt
  6. Let simmer for another 2 minutes and stir occasionally
  7. Enjoy!

Blake likes to add in his own whole wheat pasta to get some more calorie intake!

Vegetarian Yellow Curry

I am obsessed with this new recipe I tried last night. Blake is even more obsessed with this since he loves curry! This recipe is super easy to make and a must try for my curry loving friends.

Ingredients

  • 1 head of cauliflower
  • 2 tbsp coconut oil
  • 1 acorn squash
  • 2 medium size zucchinis
  • 1 bell pepper (color optional)
  • 1/3 yellow onion chopped
  • 1/2 tbsp garlic
  • 1 can of full fat coconut milk
  • 1 tbsp chili powder
  • 3 tbsp yellow curry powder
  • Pink Himalayan Salt
  • Opt: if you are doing brown rice instead of cauliflower ignore the cauliflower piece

Recipes

  1. Preheat over to 350 degrees
  2. Slice the acorn squash in 1/2 and drizzle with olive oil
  3. Bake acorn squash in oven for 30 minutes
  4. If you are making cauliflower rice over the brown rice here is how you do that! Cauliflower Rice- in your food processor slice the cauliflower and blend until rice like texture.
  5. After your rice is complete in the food processor add in 2 cups of water and cook over medium heat for 10-12 minutes.
  6. In a medium saucepan slice your zucchini, bell pepper, onion and cooked squash with 2 tbsp coconut oil until fully cooked
  7. Once thoroughly cooked add in your coconut milk, curry powder, salt and chili powder mixing together until smooth and combined.
  8. In a bowl place your cauliflower rice or brown rice and top with your delicious curry creation!

Simple Greek Salad

Obsessed with this simple Greek mason jar salad for lunches. This is super easy to make and pack!

  • 1 cucumber
  • 1/2 cup grape tomatoes sliced in half
  • 1/4 red onion chopped
  • Sprinkle of feta cheese (in a separate container)
  • 1 tbsp extra virgin olive oil & 1 tbsp balsamic vinegar (in a separate container

Easy to bring on the go or make it at home! YUMMMMM!

Mexican Style Stuffed Yellow Squash

Wow this one recipe is a must try! It is delicious and a win with the boyfriend as well. He did however add some pepper-jack cheese, sour cream and brown rice for some extra calories. Here is the easy how to!

Ingredients 

  • 3 yellow squashes
  • 1lb lean ground beef or ground turkey
  • 1/2 chopped yellow onion
  • 1 can no sodium added black beans
  • 1 cup of grape tomatoes
  • 1/2 tbsp chili powder
  • Salt and Pepper
  • Coconut oil
  • 1 tbsp Mrs Dash Southwestern Seasoning
  • Optional: cheese of your choice, low fat sour cream, quinoa or brown rice, avocado to top 

Directions 

  1. Preheat oven to 350 degrees
  2. In a skillet head over medium to high heat 1tbsp of coconut oil and cook your meat until down
  3. Meanwhile, slice your yellow squashes in 1/2 length-wise. Using a spoon carve out the seeds to form enough room for your mixture
  4. Chop your yellow onion and slice your grape tomatoes in 1/2 or into 1/3
  5. In a bowl combine your cooked meat, rinsed black beans, tomatoes, yellow onions and seasonings with a wooden spoon
  6. Dish out the mixture filling the yellow squash boats
  7. Sprinkle with Mrs Dash SW Seasoning
  8. Put the yellow squash boats in a 13×9 pan and bake the 350 degrees for 30 minutes
  9. Optional: top with cheese of your choice, low fat sour cream, side of quinoa/brown rice and an avocado on top 
  10. Enjoy!!

Last Minute Valentines Date Plans & Gifts

Valentine’s Day is tomorrow! Blake and I aren’t the biggest Valentine’s fans but we love spending the day together and doing something simple and fun. Here are some ideas for if you have a significant other or something fun to do with your girlfriends!

Date Plans 

  1. Make dinner together at home: I like to go to a fresh local farmers market (we are going to Pike Place tomorrow) and grabbing some delicious and fun ingredients to cook a delicious meal together. We usually get things we wouldnt normally make like lobster, scallops or some kind of really nice steak
  2. Go on a hike and pack a picnic: if weather is allowing this to happen find a local hike and pack some delicious snacks for a little picnic at the top enjoying the view and your date!
  3. Go to a fun movie theater: Blake and I love splurging and going to see a movie in the really nice theaters. We love iPic or Cinnebar which are theaters with the nice reclining seats that serve amazing cocktails and food in your seats.
  4. Wine tasting! self explanatory and always a good time for those winos🙂
  5. Movie day in: pick some movies you have wanted to see and havent made the time for. Grab a bottle of your favorite wine and snacks and have a day/night in all cozied up. Hello low pressure!!

Simple Gift Ideas for Him

  1. Coupon Books- boys still love these. Add in 30 minutes massage, movie night of your choice, dinner at your favorite restaurant. Get creative and personalized!
  2. Favorite Things Package- fill up a bag of some of their favorite things. This could be their favorite candy, movie, beer, magazines, etc; all the things you know they love!
  3. Beer and a Card- men are simple! Grab a 6 pack of their favorite beer and write a nice card to the one you love.
  4. Cologne- I love doing a scent exchange for Valentine’s day. It is simple, easy and a great go to gift year after year.

Book Club: Three Weeks with My Brother by Nicholas Sparks & Micah Sparks

I found this book since I am obsessed with Nicholas Sparks and dove right in. Here is the quick bio of this book…

Simple Crockpot Spaghetti Squash

Simple. Quick. Easy… and of course the big bonus being that this cooks while you are working, running errands or just sitting around. The prep time is only 5 minutes making this a perfect weeknight recipe.

Ingredients:

  • Spaghetti Squash
  • Organic Tomato Sauce
  • 2tbsp Extra Virgin Olive Oil
  • 4 cups water
  • Opt: Turkey Meatballs  (see previous post

Directions

  1. With a fork poke holes throughout the spaghetti squash every 1-2 inches around the entire thing
  2. Place in crockpot with 4cups of water and drizzle olive oil over the top of the squash
  3. Cover the crockpot with your lid and place on low for 8-10 hours
  4. After 8-10 hours carefully remove your spaghetti squash and cut horizontally (see below) to cut the squash in 1/2
  5. With a spoon remove the visible seeds
  6. Using your fork easily scrap out the squash into noodle like consistency (careful the squash can be VERY hot!)
  7. Top with your spaghetti squash and turkey meatballs if desired
  8. Enjoy!
